Ingredients:

  • Puff Pastry Sheets: 2 sheets (usually how many come in a pack)
  • Pesto: Prepared pesto of your choosing
  • Sliced Mozzarella Cheese: An 8 ounce pack, about 10 slices

Instructions:

Prepare Puff Pastry: Thaw the puff pastry sheets, which usually takes 40 to 60 minutes.

Assemble the Pinwheels:

  • Roll out the thawed puff pastry sheets.
  • On one puff pastry, lay out half of the cheese slices, cutting the cheese in half if needed to cover most of the puff pastry. Repeat with the other puff pastry and remaining cheese.
  • Scoop 3 tablespoons of pesto over the cheese on each puff pastry. Spread the pesto out evenly over the cheese.

Roll and Chill:

  • Roll up each puff pastry into a log shape, keeping the shape tight and leaving the seam side down on a plate or pan.
  • Place in the fridge for 20 minutes to firm up.

Preheat and Prep for Baking:

  • Preheat the oven to 400º F.
  • Line 2 sheet pans with parchment paper.

Slice and Bake:

  • On a cutting board with the seam side down, cut each log into 12 even pinwheels, making 24 pinwheels in total.
  • Place 12 pinwheels on each prepared sheet pan, leaving at least an inch of space between each.
  • Bake in the preheated oven for 15 minutes or until golden brown.
