This Creamy Garlic Chicken dish perfectly exemplifies how simple ingredients can create a delicious and satisfying meal. Easy One Pan Balsamic Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or rosemary or an herb of your choice)
  • ½ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, cut into wedges
  • 1 zucchini, sliced into half-moons
  • Fresh parsley for garnish (optional)

Instructions:

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • Heat the olive oil in a large oven-proof skillet over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 3 to 4 minutes per side. Remove the chicken and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute or until aromatic. Be careful not to burn it.
  • Pour in the balsamic vinegar, scraping any brown bits from the bottom of the pan. Stir in the honey and dried thyme, bringing the sauce to a simmer.
  • Reduce the heat and return the chicken to the pan. Drizzle the sauce over the chicken.
  • Add the cherry tomatoes, red onion, and zucchini around the chicken in the skillet. Drizzle the vegetables with a bit more olive oil and season with additional salt and pepper if desired.
  • Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Garnish with fresh parsley before serving, if using.

  • Chicken Marinade: For extra flavorful chicken, marinate the chicken in the balsamic glaze for at least 30 minutes before baking.
  • Vegetable Options: Feel free to add other vegetables to this recipe, such as green beans, asparagus, or Brussels sprouts.
  • Thicken the Glaze: If you prefer a thicker glaze, remove the chicken and vegetables from the baking sheet after roasting. Place the pan drippings over medium heat on the stovetop and simmer for a few minutes, or until the glaze thickens to your desired consistency. Then, return the chicken and vegetables to the pan and coat them with the thickened glaze.
