Garlic Parmesan Roasted Potatoes are a perfect side dish – crispy, golden perfection on the outside, fluffy and tender within. Ingredients:

  • 2 pounds red potatoes, quartered
  • ¼ cup olive oil
  • 5 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish
