For the keto lasagna noodles:

  • Cream cheese (from a block, not a tub for thickness and less water content)
  • Mozzarella cheese (for its mild flavor and stretch)
  • Parmesan cheese (finely grated or fresh, avoid powdered versions)
  • Eggs (room temperature)

  • Onion and garlic (essential for flavor)
  • Ground beef (lean is suggested, but any cut works)
  • Marinara sauce (choose one with no added sugar)
  • Salt and pepper (to taste)
  • Ricotta cheese (for layering and creaminess, like a mock béchamel)
  • Additional mozzarella cheese

Instructions:

Prepare the keto lasagna noodles:

  1. Combine the cream cheese, mozzarella, and parmesan cheese and microwave in 30-second increments until the mozzarella is mostly melted.
  2. Whisk in the eggs until you have a thick and creamy batter.
  3. Spread the batter on a baking sheet and bake for about 15 minutes until it gets golden around the sides.

Make the meat sauce:

  1. Sauté the onions and garlic in a pan for 5 minutes.
  2. Add the ground beef and cook until it's no longer pink.
  3. Stir in the marinara sauce along with salt and pepper, then pan-fry for an additional 5 minutes.

Assemble and cook the lasagna:

  1. Line a baking pan with foil, leaving an overhang on each side.
  2. Cut the lasagna sheet into six even pieces.
  3. Layer two pieces in the pan, followed by a third of the ricotta, a third of the meat sauce, and a third of the mozzarella.
  4. Repeat the layers until all ingredients are used.
  5. Bake in the preheated oven for 30-35 minutes until golden brown on top.
  6. Let it cool slightly, then slice and serve.

  • Allow the noodles to cool slightly before layering to prevent the ricotta from melting and altering the structure.
  • Use freshly grated cheese for a better texture.
  • You can make the lasagna noodles in advance to save time.
  • Consider using store-bought keto-friendly lasagna sheets if in a hurry.
