Ingredients

  • For the Pecan Topping:
    • ½ cup packed brown sugar
    • ½ cup melted butter
    • ⅓ cup light corn syrup
    • 1 ½ cups broken pecans
    • Pinch of salt
  • For the Cake:
    • 1 box (15.25 oz) Butter Recipe Yellow Cake Mix (or Yellow Cake Mix)
    • 1 cup sour cream
    • ½ cup milk
    • ⅓ cup vegetable oil
    • 3 eggs
    • 1 teaspoon vanilla extract

Easy Pecan Upside Down Cake Save

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Spray a bundt pan liberally with non-stick cooking spray, ensuring to cover all crevices.
  2. In a medium bowl, whisk together the brown sugar, melted butter, corn syrup, and a pinch of salt. Stir in the broken pecans until well combined.
  3. Pour the pecan mixture into the bottom of the prepared bundt pan, spreading it out evenly.
  4. In a large mixing bowl, beat the cake mix, sour cream, milk, vegetable oil, and eggs on low speed just until moistened. Then, turn the mixer up to medium and beat for 2 full minutes. Stir in the vanilla extract.
  5. Pour the cake batter over the pecan mixture in the bundt pan, spreading it out evenly.
  6. Bake for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool for 10 minutes on a wire rack. Then, gently run a knife around the edges of the cake to loosen it from the pan.
  8. Place a large serving plate or bowl on top of the bundt pan and carefully flip it over to invert the cake onto the plate.
  9. You can serve the cake immediately if you prefer it warm, or allow it to cool to room temperature for easier cutting.

Notes

  • For a different take, you can substitute the yellow cake mix with a vanilla or butter pecan cake mix.
  • If you don't have a bundt pan, you can also bake this cake in a 13x9 inch baking pan. Adjust the baking time to 25 to 30 minutes, let the cake cool for one minute, run a knife along the edge, and then flip it over.
