Savory Black Kale and Goat Cheese Pasta

Ingredients (serves 2)

  • 3 garlic cloves
  • 2 large handfuls of cavolo nero (roughly 3-4 stems) or dark curly kale
  • 2tbsp olive oil
  • 75g soft goat cheese
  • 25g parmesan cheese, grated
  • 150g pasta I love spelt radiator), would also recommend a rigatoni or casserecce
  • Juice of ½ lemon

Cavolo Nero + Goats Cheese Pasta Save

Method

  • Bring a pan of salted water to a boil and drop in the garlic cloves. Cook for 3 minutes, then add the cavolo Nero and cook for a further 2-3 minutes until starting to wilt.
  • Using tongs, transfer the garlic and veg from the pan to a food processor or blender (it’s good if some water comes with it!).
  • Add 1tbsp olive oil and blitz until you reach a smooth consistency. Add a splash more of the cooking water to loosen, if necessary. Season to taste with salt and black pepper.
  • Bring the water to the boil and cook the pasta as instructed.
  • Drain the pasta and return to the pan. Add the green sauce, Parmesan, and goat's cheese to the pasta and stir vigorously until coated. Add the lemon juice, black pepper, and salt to taste.
  • Plate up + finish with a good drizzle of olive oil, cracked black pepper, plus more cheese if ya fancy!
