Slow Cooker Beef And Broccoli For Busy Evenings

Ingredients:

The Beef:

  • 1 ½ pounds boneless beef chuck roast, cut into bite-sized pieces

The Sauce:

  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger

The Veggies:

  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, thinly sliced (optional)

To Serve (Optional):

  • Cooked rice
  • Sesame seeds

Slow Cooker Beef and Broccoli 1 Save

Instructions:

  1. Combine in the Slow Cooker: In the bowl of your slow cooker, whisk together the beef broth, soy sauce, brown sugar, cornstarch, sesame oil, garlic, and ginger. Add the beef and toss to coat.

  2. Slow Cook: Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours or until the beef is tender and shreds easily with a fork.

  3. Add the Broccoli: During the last 30 minutes of cooking, add the broccoli florets (and red bell pepper, if using) to the slow cooker. Stir gently to combine and cover. Continue cooking for an additional 30 minutes or until the broccoli is crisp-tender.

  4. Serve and enjoy! Carefully transfer the beef and broccoli to a serving platter. Spoon the sauce over the top. Serve immediately with cooked rice and garnish with sesame seeds, if desired.

Tips

  • Thicken the Sauce: If you prefer a thicker sauce, you can make a cornstarch slurry. In a small bowl, whisk together 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth. Stir the slurry into the slow cooker during the last 15 minutes of cooking. Let it simmer until the sauce thickens to your desired consistency.
  • Vegetables: You can add other vegetables to this recipe, such as carrots, snow peas, or baby corn.
  • Leftovers: Leftover Slow Cooker Beef and Broccoli can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan or microwave until warmed through.
