Ingredients

For the Sandwiches:

  • Soft, white sandwich bread (Pom sandwich bread recommended, not Texas toast)
  • Butter, margarine, or a plant-based alternative

For the Orange Filling:

  • Carrots
  • Turmeric
  • Black pepper

To Make the Pink / Red Filling:

  • Beets
  • Chili powder
  • Red or Green chili

For the Green Filling:

  • Romaine lettuce (can be omitted or replaced with spinach)
  • Spinach
  • Parsley
  • Green chili

Directions

Preparing the Vegetables:

  1. Steam the carrots and beets to avoid waterlogging them. Optionally, you can bake them, but steaming is recommended for consistency and to prevent drying them out.
  2. The spinach and lettuce will steam much quicker than the root vegetables. Alternatively, you can dry-cook the greens until they wilt, then make sure to squeeze out as much water as possible to avoid soggy sandwiches.

Making the Vegetable Paste:

  1. Use a mini food processor to separately process each vegetable with their respective spices into a rough paste. For a manual approach, grate the carrots and beets and finely chop them before mixing with the butter. Finely chop the greens, or use a mortar and pestle for grounding.
  2. Mix the processed vegetables with butter or margarine, adding salt as needed. Blend until you achieve a spreadable paste with small pieces of vegetable throughout. Adjust the butter quantity based on the desired color and taste.

Assembling the Rainbow Sandwiches:

  1. Take four slices of bread per sandwich. Spread each vegetable paste on three slices. Stack them and top with the fourth slice of bread.
  2. Trim off the crusts to create crustless squares. Then, cut each large sandwich into four mini sandwiches as squares, triangles, or fingers.

Storing the Sandwiches:

  • If made ahead of time, store the sandwiches in an airtight container in the refrigerator. Allow the butter to soften at room temperature before serving if butter was used. If margarine was used, you can serve the sandwiches chilled or at room temperature.

Final Thoughts:

  • You can optionally add a cheese layer to make a five-layer sandwich, but this may be difficult to eat at parties.
