Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can of diced tomatoes, undrained
  • ½ cup vegetable broth
  • ¼ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened about 5 minutes.

  2. Stir in the diced tomatoes, vegetable broth, sun-dried tomatoes, tomato paste, oregano, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 10 minutes.

  3. Stir in the chickpeas and parsley—season with salt and pepper to taste.

  4. Serve hot over rice or pasta.

Tips

  • If you don't have sun-dried tomatoes, you can substitute them with an equal amount of chopped fresh tomatoes.
  • You can add other vegetables to this dish, such as spinach, mushrooms, or zucchini.
  • Stir in a tablespoon of heavy cream or cream cheese for a richer flavor before serving.
  • Leftovers can be stored in the refrigerator for up to 3 days.
