Extra Veggie Steak Stir Fry Recipe

This recipe features tender strips of flank steak that are stir-fried with a colorful medley of vegetables, creating a satisfying and nutritious meal. Besides being packed with vitamins, fiber, and protein, this stir-fry is also a complete dish that can be customized by adding your favorite vegetables and sauce.

Ingredients:

The Protein:

  • 1 pound flank steak, thinly sliced against the grain

The Veggies:

  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snow peas
  • ½ cup sliced carrots
  • 2 cloves garlic, minced

The Sauce:

  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon ground ginger

Other:

  • 1 tablespoon vegetable oil
  • Salt and freshly ground black pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. Prep the Steak: Place the thinly sliced flank steak in the freezer for 30 minutes to partially freeze. This will make it easier to slice thin strips. After 30 minutes, remove the steak from the freezer and slice it into thin strips against the grain. Season the steak generously with salt and pepper.
  2. Prep the Veggies: While the steak freezes, wash and chop the broccoli florets, bell peppers, snow peas, and carrots.
  3. Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, cornstarch, honey, brown sugar, sesame oil, and ground ginger. Set aside.
  4. Stir-Fry the Steak: Heat a wok or large skillet over high heat. Add the vegetable oil and swirl to coat the pan. Once hot, add the steak and stir-fry for 2-3 minutes or until browned on all sides. Remove the steak from the pan and set aside on a plate.
  5. Stir-Fry the Veggies: Add a little more oil to the pan if needed. Add the broccoli florets, bell peppers, snow peas, and carrots to the pan. Stir-fry for 3-4 minutes or until the vegetables are crisp-tender.
  6. Add the Sauce & Steak: Pour the sauce into the pan with the vegetables and bring to a simmer. Stir in the cooked steak and cook for an additional minute or until the sauce is thickened and coats all the ingredients.
  7. Serve & Enjoy! Transfer the stir-fry to a serving platter and garnish with sesame seeds, if desired. Serve immediately with steamed rice.

  • Marinating the Steak (Optional): For extra flavorful steak, marinate the sliced steak in a mixture of soy sauce, rice vinegar, and sesame oil for 30 minutes before stir-frying.
  • Veggie Variations: Feel free to add or substitute other vegetables you have on hand, such as snap peas, zucchini, or baby corn.
  • Adjusting for Different Cuts of Meat: If using a different cut of meat, such as chicken or shrimp, adjust the cooking time accordingly. Chicken and shrimp will cook much faster than flank steak.
