Authentic Recipe For Italian Drunken Noodles

Italian Drunken Noodles is a mouth-watering fusion dish that combines the flavours of Italian sausage and peppers with the cooking style of Pad Kee Mao, a popular Thai noodle dish. The dish features wide noodles such as pappardelle or fettuccine, cooked in white wine and tossed with spicy Italian sausage, colourful bell peppers, and fresh basil. It's a delightful blend of Italian and Thai cuisine that will surely please your taste buds.

Italian Drunken Noodles Recipe

Ingredients

For the sausage and peppers:

  • 1 tablespoon olive oil
  • 1 pound hot or sweet Italian sausage casings removed
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

For the drunken noodles:

  • 8 ounces pappardelle noodles or other wide egg noodles
  • ½ cup dry white wine
  • 1 (14.5-ounce) can of diced tomatoes, undrained
  • ¼ cup chopped fresh basil
  • ¼ cup grated Parmesan cheese
  • Freshly ground black pepper to taste

Instructions

  1. Cook the sausage and peppers: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease from the skillet.

  2. Sauté the onions and peppers: Add the onion to the skillet and cook until softened about 5 minutes. Add the red and yellow bell peppers and cook for 5 minutes until the vegetables are tender-crisp. Stir in the Italian seasoning and red pepper flakes (if using). Season with salt and freshly ground black pepper to taste.

  3. While the vegetables are cooking, cook the noodles according to package directions. Drain the noodles, reserving about ½ cup of the pasta water.

  4. Assemble the drunken noodles: Return the cooked sausage and peppers to the skillet or Dutch oven. Add the cooked noodles, white wine, diced tomatoes with their juices, and reserved pasta water. Bring to a simmer and cook for 2-3 minutes until the sauce has thickened slightly and the flavours have melded.

  5. Stir in the chopped fresh basil and grated Parmesan cheese. Season with additional black pepper to taste.

  6. Serve immediately and enjoy!

Tips

  • You can adjust the amp pepper flakes to your desired spice level.
  • You can use chicken broth if you don't have white wine.
  • Other vegetables that can be added to this dish include mushrooms, broccoli, or zucchini.
  • Leftovers can be stored in the refrigerator for up to 3 days.
