One-Pan Chicken And Veggie Skillet Dish Save

Ingredients:

  • 1 pound boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped vegetables of your choice (e.g., broccoli florets, carrots, bell peppers, zucchini)
  • 1 (14.5 ounces) can of diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions:

  1. Brown the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned on all sides.
  2. Sauté the Veggies: Add the onion and garlic to the skillet and cook, stirring often, until softened, about 2 minutes. Stir in your chosen vegetables and cook for 3-5 minutes until they soften.
  3. Simmer and Season: Add the diced tomatoes, Italian seasoning, salt, and pepper to the skillet. Bring the mixture to a simmer, then reduce heat to low and cover. Cook for 10-15 minutes until the chicken is cooked and the vegetables are tender.
