  • 2 cups mashed potatoes (cooled)
  • ½ cup grated parmesan cheese
  • ¼ cup finely minced onion
  • ¼ cup minced parsley, plus more for serving
  • 3 large eggs, divided
  • 1 clove garlic, finely minced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup panko breadcrumbs (gluten-free if needed)
  • ¼ cup all-purpose flour (or substitute cornstarch for gluten-free)
  • Oil for frying

Instructions

  1. Combine the cooled mashed potatoes, parmesan cheese, onion, parsley, garlic, salt, pepper, and 1 of the eggs in a large bowl and mix until well combined.
  2. Prepare three shallow bowls. In the first bowl, place the ¼ cup flour. Whisk the remaining 2 eggs in the second bowl. In the third bowl, put the 1 cup panko breadcrumbs.
  3. Form the potato mixture into balls. Dip each ball first into the flour, then into the egg, and finally coat it with panko. You may want to use one hand for the wet ingredients and one hand for the dry ingredients to minimize the mess.
  4. Heat 2 inches of oil in a high-sided frying pan over medium-high heat until it reaches 350 degrees Fahrenheit.
  5. Working in batches, add the potato croquettes to the pot, ensuring not to overcrowd the pan. Fry them for about 2 minutes or until they are light brown.
  6. Remove the croquettes with a slotted spoon and place them onto a cooling rack over a baking sheet or a paper towel-lined plate. This will catch the excess oil. Between batches, ensure the oil temperature returns to 350 degrees Fahrenheit.
