Juicy & Flavorful Greek Chicken Kabobs

Greek Chicken Kabobs burst with the vibrant flavors of the Mediterranean. Tender chunks of chicken, marinated in lemon, herbs, and garlic, are threaded onto skewers with crisp bell peppers, sweet onions, and juicy tomatoes. Grilled to perfection, these kabobs are a healthy, delicious, and visually stunning addition to any meal.

Ingredients:

Marinade:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Kabobs:

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • ½ red onion, cut into thick wedges
  • 1 pint cherry tomatoes

Instructions:

  1. Make the Marinade: In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Marinate the Chicken: Place the chicken in a large bowl or resealable bag. Pour the marinade over the chicken and toss it to coat it evenly. Marinate in the refrigerator for at least 30 minutes or overnight for maximum flavor.
  3. Assemble the Kabobs: Thread the marinated chicken pieces, alternating with bell peppers, onion wedges, and cherry tomatoes, onto skewers.
  4. Grill Time: Preheat a grill or grill pan to medium-high heat. Grill the kabobs for 10-12 minutes, turning occasionally, until the chicken is cooked and the vegetables are tender and slightly charred.
  5. Serve and Enjoy: Serve the Greek Chicken Kabobs hot off the grill with your favorite sides, such as tzatziki sauce, pita bread, hummus, or a fresh salad.
